Raw Cheesecake - that's good for you!

Since going gluten free and being more mindful of how nourishing the food that I put into my mouth is, I always look for treats that are good for you! Why not! I’m sick of having treats then to have that shitty feeling of regretting it and knowing it was not any good for you.

The recipe below is from @healthymunchkins I have altered it a tiny bit so pop over to their page to check out their version and lots of variations 💕 They have some beautiful recipes.

After making a few different flavours I have found the recipe is pretty forgiving. For example, if you added two cups of activated cashews and one whole avo, it would still work out.

Why activate your nuts? Activation stimulates the early germination and sprouting process. Soaking nuts: Soaking increases the nutrient value of the nuts and also breaks down the problematic compounds that help enhance their digestibility. Here is a great article all about it.

All ingredients are organic = more goodness! I use all activated nuts & seeds too = upping that goodness value and making it easier for your gut to process.


⅓ cup walnuts
⅓ cup raw buckwheat
⅓ cup almonds
1/8 cup sunflower seeds
1/8 cup pepitas
1/8 cup desiccated coconut
(any combo of nuts and seeds approx. 1½ cups! I like activated if possible)
7 medjool dates
2 heaped tbsp raw cacao
Pinch of fine pink Himalayan salt

3 cups cashews (I soaked mine for 5hrs before)
1/2 cup maple syrup
1 avocado
Good pinch of fine pink Himalayan salt
80g cacao butter (can use coconut oil)
50g melted coconut oil
Juice of 2 lemons 
20 drops of doTERRA lemon essential oil 
20 drops dōTERRA lime essential oil
1 drop dōTERRA turmeric essential oil
1 tsp turmeric powder


  1. Soak cashews in filtered water with a little salt a few hours before hand

  2. Slowly melt the cacao butter in a ceramic dish on low (100°C) in the oven. If you have a thermomix you can do this at step 10

  3. Zest 1 lemon & keep aside (do before juicing lemons!)

  4. Place nuts & seeds (I like to use activated nuts & seeds) in processor speed 7 for 5 seconds or until significantly chopped/starting to resemble meal

  5. Add raw cacao & salt & blitz at speed 4.5 adding one (pitted) medjool date at a time until desired consistency is reached

  6. Place a strip of baking paper at the base of the baking tray

  7. Spoon mixture into the tin & press down with a spoon (or clean fingers) to condense together & flatten base

  8. Place tin in the fridge (or freezer)

  9. Clean out thermomix or food processor

  10. Remove melted cacao butter from the oven or if you have a thermomix blitz speed 9, then melt on 37 degrees, speed 2 for 3 mins or until melted. 

  11. Squeeze lemons

  12. Drain cashews

  13. Add cashews, turmeric, maple syrup, salt, lemon juice, lemon + lime oil & melted cacao butter into processor. Blend for 20 secs, speed 4.5. Scrape down sides & continue to blend for a further 2mins or until really creamy

  14. Remove tin from fridge/freezer and spoon mixture over base

  15. Sprinkle with lemon zest, return to fridge until set. Enjoy x
