Hidden Veg Bolognese

I know how hard it is to get vegetables into kiddos, I have three of them! The trick is to find meals they love and then add the goodness in so it’s under disguise.

This meal went from the standard onion, meat, tomato, celery and carrot to a mother load more veggies and goodness as you’ll see below.

It’s my go-to meal when I have no time, I just grab a jar of it out of the freezer in the morning and it good to go by the afternoon.

Ingredients

  • Ghee or Olive oil

  • 2 Onions

  • 300g Mushrooms

  • Bunch kale or silverbeet or spinach

  • 3 Carrots

  • 4 Celery sticks

  • 2 Zucchini

  • 1 Capsicum

  • 5 clove of garlic

  • 2 can chopped tomatoes tins

  • 2kg Grass fed ground beef

  • ½ cup tomato paste

  • 2 cups beef or vegetable stock

  • 1/3 cup dry white wine

  • 2 Pasta Sauce jars

  • 2 tbsp sugar

  • 1 drop Oregano essential oil (doTERRA)

  • salt generous pinch and pepper pinch

Instructions

  1. Add all veggies into a food processor and process, until veggies are finely chopped. If your kids are super picky blitz a little more so they can’t recognise them. I like to do this in batches with texture like veggies so the soft ones don’t got to mush ;)

  2. Heat oil in pan, add veggies and cook until soft then add to a large slow cooker.

  3. Add mince to pan, cook in batches until mince is brown then add to the slow cooker.

  4. Add all other ingredients to the slow cooker and cook on low for 5-7 hrs.

  5. Once cooled slightly add 1 drop Oregano essential oil (doTERRA)

  6. I like to keep one meal aside to eat straight away then freeze the rest. If you are going to freeze it in glass jars make sure you leave room at the top and only fill jars that are straight up and down. If there is a curve in the jar, in my experience they crack, as the food expands when frozen. Happy days feeding your kiddos extra goodness!

Tip: To make Taco Sauce add Cajun Pepper.
